Dad's Venison Summer Sausage

This recipe was passed on to me from my dad and is great for quick and delicious summer sausage. Don't have a smoker or casings? That's ok! In this recipe all you will need is a baking sheet, a handful of ingredients, and an oven to end up with delicious loaves of summer sausage. Dad's Venison Summer Sausage is the perfect for your tailgate party, for sharing with buddies at hunting camp, a hunting snack, or throwing it together with some cheese, crackers, and a cold one of your choice!

INGREDIENTS:

2 tablespoon Morton Tender Quick

1 1/2 teaspoon Liquid Smoke

1/2 teaspoon Garlic Powder

1 tablespoon Black Powder

3/4 tablespoon Crushed Red Pepper

1/4 cup of water

2 lbs. Venison


INSTRUCTIONS:

Mix all ingredients together in a large mixing bowl. Be sure to mix all ingredients thoroughly to evenly spread out your seasonings and spices!

Then, you will need a medium sized baking sheet or pan. I use a glass cake pan.

Take your mixture and make 4 evenly distributed loaves and place them on your pan/sheet with at least an inch between each loaf.

Your loaves should be at least an inch a part, about as big around as a golf ball to baseball (depending on how you like it), and about 6-8 inches long.

Bake your loaves at 300 degrees for an hour and 15 minutes.

After your baking time is complete, let your loaves rest at room temperature for 10 minutes and then place them in the fridge to cool.

After cooling, you're ready to eat!
